Ingredients for 6 Piadinas:
On a pastry board, place the flour and a pinch of baking soda, dissolve the salt in the water almost boiling, add the lard (in the original version is a must but you can easily replace with olive oil) to beginto incorporate the liquid with the help of end of a fork and knead by hand until the 'dough becomes smooth and elastic.
Form 6 balls and let them rest under a floured cloth for ten minutes.
Spread the piadinas with a rolling pin and a bit 'of flour (about a couple of millimeters thick).
Cook over medium heat on a special plate or, failing that, a thick-bottomed pan, pricking the bubblesthat are formed with a fork and turning at least 2-3 times per side.
